If you are in the market for a new veggie-loaded sandwich, try this easy recipe! This sandwich doesn’t take more than 10-15 minutes to put together.
You know some recipes are so simple that you think if it qualifies enough as a recipe to share.
But then the very same dishes are delicious and even though super simple to make, you cannot resist sharing them.
And that’s exactly my thoughts about this Curd Sandwich.

While you can omit the grilling to make this more like a basic no-cook sandwich, I’m here to tell you that this simple step makes all the difference.
Grilling/toasting the sandwiches on tawa makes the bread slices golden crisp my family like it that way.
Ingredients required
- Hung Curd – Use ONLY hung curd or greek yogurt for this recipe. I have prepared the hung curd by draining the water. but if it is too much work for you, you can use the store-bought greek yogurt
- Bread – Any bread will work for this recipe. Choose any variety of your choice. I am using whole wheat bread.
- Vegetables – I am using spinach, carrots, onion, and colorful bell peppers here. You can use cauliflower, broccoli, corn, green peas, grated squash, or doodhi(bottle gourd) too.
- Spices – The beauty of this recipe is, it requires only salt and pepper.
- Chili paste – Chili paste is optional here. I like spice kick in my sandwiches so I have used Thai chili paste. Instead of that chili paste, you can use sriracha or any hot sauce too.
- Butter – Butter is required to toast the sandwich. You can use ghee or oil too.
- Herbs – To give refreshing flavor, I have used mint. You can use cilantro, basil, thyme, or rosemary, or a combination of herbs instead of mint.
- Cheese – Again cheese is optional here. Skip if you want to make a lighter version of the curd sandwich. I have used an American cheese slice. You can use any cheese of your choice. Shredded or slice works fine in this recipe.
How to Make a Grilled Curd Sandwich? Step by step process
Take hung curd, onion, bell pepper, carrots, spinach, mint, salt, pepper, and chili paste in a big mixing bowl. Mix everything well until well combined.
Now take 2 bread slices and trim the sides if you want to.
Take one slice of bread and place one slice of cheese. Spread the mixture generously on top. Cover it with another slice over it.
Heat Tava / grilling pan. Add some butter.
Now place the sandwich and spread some ghee over it. Toast one side of bread by pressing gently on a low flame (Keep the flame low to medium all the time to get the sandwich crispy and evenly cooked).
Flip the sandwich and again roast it until light brown on low to medium heat.
Cut it into half and serve with tomato ketchup or any other dip of your choice.
Notes and pro-tips
- Make sure the flame of the stove is on low to medium heat while grilling the sandwich on tawa.
- If making this sandwich for kids, skip the green chili.
- Don’t like onions? Don’t feel obligated to add them.
- If you find your hung curd is sour you can add 1-2 teaspoon of powdered sugar to neutralize it.

You can chop the vegetables a night before and then refrigerate them. So in the morning quick hours, you just need to mix in with curd and assemble the sandwich.
It is not advisable to make this sandwich in the microwave for a few reasons. First, the water content of the vegetables will weep, making the sandwich soggy. Plus microwave can cause the bread to get very dry and chewy.

Love the idea. Will it become soggy if packed for lunch? Lunch time for kids is 3-4 hours after I make this.

I used homemade Thai chili paste. I just crushed Thai chilies in my blender. You can use any chilies like jalapenos, serrano, etc. instead of thai chili.
