Sooji Halwa / Rava Sheera is wonderful dessert that can be prepared in no time. It doesn’t require much advance preparation. It is associated with a lot of religious function where it usually served as “Prasad”. It is most commonly prepared on the day of Satya Narayana Pooja or Katha. When I was kid, I always wait for the pooja to end, so I will get to eat the Sheera Prasad. 🙂 You will need very few ingredients to make this dessert.
In Southern India they also add saffron and they call this halwa as Rawa Kesari as it has orange color and they add water instead of milk.
Semolina / Rava / Sooji – 1 cup
Ghee – 1/2 cup
Warm milk – 1 1/2 cup
Hot water – 1 1/2 cup
Sugar – 3/4 cup
Chopped raisins – 1 tbsp
Chopped Almonds – 1 tbsp
Chopped Cashew nuts – 1 tbsp
Cardamom – 1/2 tsp
Chopped Cashew nuts
1. Heat ghee in a big pan. Add Sooji / Rava. Saute it on low to medium heat for 6 to 8 minutes or until sooji gets light brown in color. Stir continuously. Add Chopped Almonds, Chopped Cashew nuts and Chopped raisins. Mix them well and cook it for 1 more minute.
2. Mix the hot water and warm milk in a bowl. Add water-milk mixture into the sooji. Mix well and cook them for 1 to 2 minutes, while stirring continuously.
3. Add sugar and mix well. Cook on a slow flame for 5 minutes or until whole mixture starts thickening and starts to leave the edge of the kadai or pan. The ghee also will be visible at the sides. Add Cardamom powder and mix well. Switch off the flame.
4. Your Sooji Halwa is ready. Garnish it with Chopped cashews and almonds and serve hot.
