Pesarattu is a delicacy from Andhra Pradesh. Pesarattu is not only easy to prepare but also very nutritious. Pesarattu is made with green moong beans and rice making it wholesome, full of protein. This dosa is served with Ginger chutney / Allam Pachadi. I make this most of the time for breakfast or weekday dinner along with Allam Pachadi or Coconut chutney.
Green moong / green gram – 1 cup
Rice – 1/2 cup
Chopped green chilies – 2
Chopped ginger – 1″
Cumin seeds – 1 tsp
Salt to taste
Oil or Ghee
1. Soak moong and rice separately for 6 hours or overnight and rinse 3 – 4 times in water.
2. Add ginger, green chilies, salt and cumin seeds. Place this into grinder and grind it in to smooth paste using little water to get dosa batter like consistency. Keep this batter for 1 hour for better result.
3. To prepare Pesarattu, heat a tawa and pour a ladle full of batter and spread in circular motion. Spread it as thinly as you can to make it more crispy.
4. Pour oil or ghee over edges. Let it cook until it gets brown in color from the bottom.(You can sprinkle onion, coriander, green chilies and cumin seeds at this point, if you wish to)
