Let me explain to you What is Elote?
Elote means “corn on the cob” in Spanish. But mostly it is known as Mexican Street corn, which is coated in a mixture of Cilantro, Garlic, Chili powder, Cojita, and Mayo and then grilled and served it with a lime wedge.
I have been obsessed with it since I had it in my last year’s Cruise trip to Ensenada. I Love Mexican Street corn but sometimes, corn kernels stuck in my teeth. So preferred to eat as a dip, with a spoon or chips.
Best of all, this takes just minutes to whip up. It is amazingly creamy with a hint of spice and tanginess.
You’ll need very few ingredients to make this Elote dip. Which Includes
Whole kernel corn (I prefer fresh, but you can use frozen or canned)
onion (I love green onions, you may use any)
Mayo (You may use Greek yogurt, sour cream or cream cheese)
Crumbled Cotija cheese or Queso cheese (You may use parmesan too if Cotija or Queso cheese is not available)
And some Tortilla chips.
