With just five minutes of prep, no rolling required, mix, soak, spread, and bake to achieve a crunchy, flavorful treat you’ll love!

I love snacking on dips with super-crispy crackers, so I created an easy multi-seed cracker recipe. These nutritious crackers are perfect on their own or with dips and cater to various dietary needs—paleo, keto, egg-free, dairy-free, gluten-free, and low-carb. Remember to spread the mixture as thinly as possible for maximum crispiness, as thicker layers can result in softer crackers.

Ingredients
- Seeds: For this recipe, I prefer to use a variety of seeds that add texture and flavor. My favorites include white sesame seeds, sunflower seeds, flax seeds, chia seeds, hemp seeds, and pumpkin seeds. Each of these seeds contributes unique nutritional benefits and a delightful crunch to the crackers. However, feel free to experiment with your selections! Just make sure to maintain the same overall quantity of seeds so that the balance of ingredients remains consistent. When choosing seeds, opting for all-natural, raw varieties without added salt is important. This ensures that your seed crackers remain wholesome and flavorful.
- Psyllium Husk Powder: Commonly referred to as isabgol powder, this ingredient plays a crucial role in the recipe. Psyllium husk powder acts as a binding agent, helping to hold the seed mixture together and giving the crackers a sturdy texture. Its ability to absorb water also contributes to the overall consistency of the dough, making it easier to shape and bake.
- Seasonings: While I typically use just salt to enhance the natural flavors of the seeds, I encourage you to get creative with the spices and seasonings. This recipe is versatile, so feel free to experiment with your favorite herbs and spices. Whether you opt for garlic powder, paprika, or a dash of cayenne pepper, the choice is yours! Tailoring the seasoning blend to your palate can elevate the flavor profile of your seed crackers. Boiling Water: You will need 2 cups of boiling water to bind all the ingredients together. Hot water is essential, as it helps activate the psyllium husk powder and ensures that the seeds absorb moisture effectively. This step is crucial for achieving the right dough consistency, so be sure to measure accurately and pour the boiling water over the seed mixture gradually, stirring well to combine.

Instructions
- Step 1: Put chia seeds, flax seeds, and psyllium husk in a large mixing bowl.
- Step 2: Add water and stir well. Set aside for 5 minutes.
- Step 3: Once the 5 minutes are over, add the sesame, sunflower, pumpkin, hemp seeds and salt.
- Step 4: Mix very well.
- Step 5: Transfer the mixture to the prepared baking sheet. Spread it into a thin layer, about โ inch.
- Step 6: Bake in the oven at 325 degrees F. for 1 hour.
- A recommended step for even cuts is to take the tray out halfway through baking (after 30 minutes) and cut the crackers into squares using a knife or a pizza cutter. Then, place the tray back in the oven.
- Adjust the baking time to match the golden and crispy crackers you want. Keep an eye on them towards the end of baking so they don’t burn.
- Remove the crackers from the oven and let them cool completely.
- You can now enjoy the seed crackers or store them for later!
Variations
- You can enhance seed crackers with herbs and spices like Italian seasoning, garlic powder, or paprika.
- Add 2-3 tablespoons of grated Parmesan for a cheesy flavor, or use Cheddar cheese powder and nutritional yeast for a vegan option.
- To make them sweet, incorporate a sweetener like honey or maple syrup.
- If psyllium husk is unavailable, you can omit it.
Methods for Serving Seed Crackers
- Independently: Seed crackers serve as an excellent quick and nutritious snack on their own.
- Accompanied by Dips: It is advisable to pair seed crackers with softer dips, as they can be somewhat delicate. Suitable options include homemade hummus, baba ganoush, muhammara, or guacamole.
- With Cheese: Enhance the experience by adding a selection of cheeses, such as sharp cheddar, smoked gouda, soft blue cheese, or warmed brie.
- In Salads
- As part of Charcuterie Boards
- With Soups
These various serving suggestions highlight the versatility of seed crackers in different culinary contexts.
Storage
One of the great features of this gluten-free cracker recipe is its convenient storage, allowing you to enjoy these tasty snacks for an extended time. With a satisfying crunch and hearty flavor, these crackers will stay fresh whether stored in the pantry or the freezer.
Storage Instructions: To maintain their flavor and texture, the keto-seeded crackers can be kept in an airtight container at room temperature for up to 2 weeks.
Freezing Guidelines: Place the crackers in a freezer-safe container for longer storage. Remember, freezing may make them more brittle, so store them flat to prevent breakage. This way, you can enjoy them at their best whenever you’re ready!
Top tip
- To achieve perfectly baked crackers, remember to rotate them halfway through the baking process. This simple step ensures they cook evenly and develop a consistent crispness.
- After about 30 minutes, take a sharp knife and gently cut the crackers into your desired shapes.
- These delightful seed crackers pair wonderfully with various dips, particularly our vibrant red pepper hummus.
- The recipe is designed for a large sheet pan measuring 18 x 13 inches, which creates thin, delightful crackers.
- Simply spread the batter across two pans using smaller baking sheets to maintain the ideal thickness.
- Always line your baking surface with parchment paper or a silpat; this crucial step prevents the crackers from sticking to the pan, ensuring they come out intact and ready to enjoy.
- Store your crackers in an airtight food storage container or a zip-top bag to keep them crispy. They’ll stay fresh for about two weeks.
- Remember that oven temperatures can vary, so it’s wise to check on the crackers at the 50-minute mark to avoid overcooking.
- While resting the batter is important, limit this time to no more than five minutes. Allowing the mixture to rest too long will cause the chia seeds to swell, resulting in a thicker, doughier mixture that’s more difficult to spread, leading to less crisp crackers.
- Achieving an even spread of the mixture is essential for creating super seed crackers with a thin, crisp, and uniform texture. Use a spatula, a spoon, or the back of a ramekin to smooth the mixture across the pan skillfully.

Excellent seed crackers. I have tried a number of other recipes and like this one. Next time I will also add Za’atar (2 Tbsp) which is good in another recipe.
