So, what is Peri Peri? The term “Peri Peri” actually means “pepper” and refers to spicy sauces and powders that people often use for grilling, particularly in Spain and Portugal. Over time, peri peri has gained popularity worldwide as a spice mix that can even be added to French fries.
Today, I'm sharing a simple yet flavorful paneer hotdog recipe, using peri peri spice that you can whip up in just five minutes. You can make a batch and keep it in a sealed container in your fridge for adding to your fries, sandwiches, salads, and even snacks like Makhana whenever you want a spicy kick.

Ingredients

- Paneer: This is the star ingredient in the recipe, so try to use good-quality paneer for the best flavor.
- Vegetables: I've used cabbage, bell peppers, and carrots. Make sure to chop them into small pieces so they mix well.
- Onion: Onions add a natural sweetness. I prefer using red onions, but yellow or white onions work perfectly too.
- Garlic Chutney: This adds a fantastic taste to the hot dogs. Homemade garlic chutney is the best option for maximum flavor.
- Spices for the peri peri Mix: You'll need a variety of spices, including red chili powder, black salt, powdered sugar, ginger powder, garlic powder, oregano, cinnamon powder, regular salt, and aamchur powder.
- Fresh Coriander: This herb adds a fresh and zesty touch to the dish.
- Hot Dog Buns: These are essential for holding all the delicious fillings. I used Pepperidge Farm top-sliced hot dog buns, which are easy to find in stores. They are simple to fill and work great for this recipe, but you can choose any hot dog buns you like.
- Butter: This is used for toasting the hot dog buns, giving them a beautiful, shiny finish.
- Heavy Cream: This adds richness to the mixture and helps combine all the ingredients smoothly. Cheese: I used grated pepper jack cheese for a tasty touch. If you want to give it a some more Indian twist, you can also use Amul cheese.

Instructions

Step 1: Making the peri peri masala: Grab a jar and add red chili powder, black salt, powdered sugar, ginger powder, garlic powder, oregano, cinnamon powder, regular salt, and aamchur powder. Mix them together well. If you prefer, you can also put all the spices in a blender and grind them until they are fine. Your peri peri spice mix is ready!

Step 2: Prepare the Filling: In a large bowl, combine diced paneer (Indian cheese), chopped cabbage, bell pepper, onion, carrots, garlic chutney, heavy cream, grated cheese, and 1 tablespoon of the peri peri spice mix. Mix everything gently with forks or a spoon. Be careful not to break the paneer pieces. Set this mixture aside.

Step 3: Make the Butter topping: In a bowl, mix melted butter with the remaining peri peri spice mix and some chopped cilantro. Stir everything together and set it aside.

Step 4: Fill the Buns: Take a top-slit hotdog bun and gently open it a little. Press the inside of the bun slightly to create room for filling it up, being careful not to tear it. Spoon in the peri peri paneer filling until it's filled. Repeat this process with all the hotdog buns.

Step 5: Baking: Place the filled buns on the baking tray lined with parchment paper. Brush each bun with the butter and cilantro mixture you prepared earlier. Cover the tray with aluminum foil and bake in the preheated oven for 25 minutes.

Step 6: Serving: Once done, take the buns out and let them rest for 5 minutes. Then, uncover and serve them hot or warm. Enjoy!

Surving suggetions
I always keep a variety of sauces and toppings ready for recipes like this. I love adding a little mayonnaise, green chutney, avocado mint chutney, sweet and tangy tamarind date chutney, or a spicy chipotle sauce!
Variations
- Make Peri peri paneer hot dogs vegan by substituting paneer for extra-firm tofu. You'll also need to check your hot dog buns are vegan, and use vegan butter for toasting.
- You can replace hot dog buns entirely and use sandwich bread or slider buns to make a peri peri paneer recipe.
- Add more vegetables. Sweet corn or peas are fantastic additions. Or you can swap any veggies with your favorite vegetables.
Storage
The leftovers can be stored in an air-tight container in the fridge for up to 3 days.
Top tip
- I used large hotdog buns, which let me make 8 hotdogs. If your buns are smaller, you can make even more hotdogs!
- For this recipe, I think pepper jack or Amul cheese works best, but you can use any type of cheese you like.
- If you're making these hot dogs for small kids, I suggest removing garlic chutney and just adding a bit of grated garlic, since it can be too spicy for them.
- Also, make sure to cover the hot dogs with foil before baking them. This helps prevent them from getting too brown or hard.
- If you can’t find the specific rolls I used, don't worry! You can use any type of bun you prefer. The hot dog rolls just make it easier to put everything together and bake. Add more cheese if you want more cheesy.
