How to make coconut quinoa in instant pot/pressure cooker?
Rinsing quinoa is a very important step, it removes the natural coating from quinoa which can make it taste bitter.
Quinoa to water ratio and cooking time really depends on what kind of texture you prefer of your quinoa.
We prefer al-dente quinoa like every grain should be separated from each other. So for that, I keep 1:1 Quinoa to water ratio. So for 1 cup of quinoa, you would use 1 cup liquid and cooking time would be 1 minute following by natural pressure release.
Heat oil in instant pot.
Add rinsed quinoa, coconut, water, salt, lemon juice, and lemon zest.
Close the locking lid, turn vent knob to seal and cook on high pressure for 3 minutes.
Let the pressure release naturally.
How to freeze quinoa?
Prepare quinoa as the recipe says.
Allow it to cool completely.
Freeze in a small portion in freezer-safe bags or containers.
Defrost in the fridge overnight to use in your favorite recipes or as a side dish.
Can we use any variety of quinoa?
Yes, for this recipe, you can use any variety of quinoa.
Cooking time will change if we increase the quantity of quinoa?
Regardless of how much quinoa you make, the cook time remains the same.

Instant Pot Lemon Coconut Quinoa
- 1 cup - quinoa
- ¼ cup - unsweetened shredded coconut
- 1 cup - Water or vegetable stock
- Salt to taste
- 1 teaspoon - lemon zest
- 1 tablespoon - lemon juice.
- 1 tablespoon - coconut oil
- Wash quinoa in water 2 to 3 times. Drain all the water.
- Heat oil in Instant Pot.
- Add all the ingredients (Washed quinoa, salt, lemon juice, lemon zest, salt, water, and coconut).
- Stir well.
- Cover IP with lid, Vent knob on sealing position.
- Press the manual/pressure button for 1 minute under high pressure.
- When cooking time is done, let the pressure release naturally.
- Open the lid and fluff the quinoa with fork.
