Sev Tameta Nu Shak / Sev Tamatar Sabzi recipe is one of my all-time favorite Gujarati sabzi/curries. Sev Tameta Nu Shak as it’s called in Gujarati is a sweet and sour curry made from tomato, sev, and spices. This curry is often eaten with Gujarati Bhakhari or Rotla.
This curry is very easy and hardly takes a few minutes to prepare.
You can prepare Sev at home or you can buy it from any Indian Grocery store. This curry requires slightly thick Sev. There is a variety of Sev you may find in the Store, make sure you select the right one.
This curry is very popular among the Jain Gujarati community in India. This curry is made during the festival of Paryushan Parva when roots and other vegetables are suggested not to consume in the diet.
How to make Sev Tameta Nu Shak | Sev Tamater Ki Sabzi?
1. heat oil in a pan, add curry leaves and green chilies. Saute it for a few seconds.
2. Add Chopped tomatoes, turmeric powder, chili powder, salt, Jaggery and cumin, and coriander powder. Mix them very well. Let this simmer for 5 minutes or until tomatoes are soft over the medium heat. Add 1 cup of water. Cook it for 2 minutes.
3. Add Sev, mix them well and cook it for only 1 minute over medium to low heat.
4. Garnish it with coriander/cilantro and serve Sev Tameta Nu Shak / Sev Tamatar Ki Sabzi / Sev Tomato Curry with Roti, Bhakhari or Bajri Rotla.
Note:– The tomatoes can be cooked beforehand, but add sev just before serving so that it remains fresh and crisp.

Ingredients
- Sev - 1 ½ cup
- Tomatoes cut into cubes - 2 ½ cup
- Turmeric powder - ½ tsp
- Coriander and cumin powder (Dhana-Jeera powde- 2 tsp
- Red chili powder - 1 tsp
- Green chilies - 1
- Curry leaves - 5 to 6 leaves
- Jaggery - 1 tbsp Or depends on the sourness of tomato
- Oil - 2 tbsp
- Salt to taste
- Coriander / Cilantro for garnishing
Instructions
