Rajgira Aloo Puri is very easy to make and delicious. It is made from Rajgira Atta/Amaranth Flour. Amaranth Flour/Rajgira ka atta is one of the ingredients that is used during Navratri fasting days.
This is a gluten free recipe and vegan too. These can be served with Curd or raita. Amaranth flour is one of the most protein-rich of any plant-based food.
Rajgira Aloo Puri tastes really great and hence you can make this puri even during regular days. instead of just fast days. If you don’t want to add Potatoes, you can make it plain too. Click here to know how to make Rajgira Puri.
Few important tips :
- Rajgira Puri is difficult to roll as it gets stuck on board. Use the plastic sheet, as shown in the video, to roll the puri.
- You don’t need to add water.
- Always handle the rolled puri with soft hand or else it may break.
- If you don’t want to make puri, you can also make paratha out of this dough.
- Always fry this puri in hot oil.
How to make Rajgira Aloo Puri?
1. In a big mixing bowl, take Rajgira flour, mashed potatoes, salt, cumin seeds, ginger-chili paste, and cilantro. Mix well and knead into dough. Add a little bit of water if needed.
2. Cover the dough and let it rest for 15 minutes.
3. Make small lemon size balls.
4. Cut the plastic bag. Grease it with little bit oil. Place each ball on a plastic sheet and gently roll into a puri.
5. Deep fry one by one in hot oil, until puffed up and
6. golden. Drain on absorbent paper.
7. Serve Rajgira Aloo Puri with Curd. Enjoy!!

Ingredients
- 1 cup Boiled, peeled and mashed potatoes
- 1 cup Rajgira Atta / Amaranth flour
- 1 teaspoon Ginger paste
- 1 teaspoon Green chili paste
- Salt to taste
- ¼ cup Cilantro
- 1 teaspoon Cumin seeds
- Oil for frying
Instructions
