Karela(Bitter Gaurd) is a vegetable that has high medical and nutritive benefits to the body because of the bitterness. Gujarati’s have a famous saying “Aav re varsad, dhebariyo parsad, uni uni rotli ne karela nu shak”. Means “Allow the rain to pour heavily and come serve the delicious bitter gourd with hot Phulka Roti (Indian Flat bread). Karela Sabzi is one of my favorite curry.
Chopped Karela(Bitter Gourd) into rings – 2 cups

1. Sprinkle some salt over chopped karela. Leave it for 10 minutes. After 10 minutes, Squeeze karela and take out water. That would reduce the bitterness from karela marginally.
