Karela Sabzi is one of my favorite curries. Karela(Bitter Gaurd) is a vegetable that has high medical and nutritive benefits to the body because of the bitterness.

Gujarati’s have a famous saying “Aav re varsad, dhebariyo parsad, uni uni rotli ne karela nu shak”. Means “Allow the rain to pour heavily and come serve the delicious bitter gourd with hot Phulka Roti (Indian Flatbread). 🙂

How to make Karela Sabzi | karela Nu Shaak?

1. Sprinkle some salt over chopped karela. Leave it for 10 minutes. After 10 minutes, Squeeze karela and take out water. That would reduce the bitterness from karela marginally.

2. Heat oil in a pan. Add karela and turmeric powder. Mix them very well. Cover it and cook it for 5 minutes or until karela is tender over medium heat.

3. Add cumin and coriander powder, chili powder and jaggery. Mix them very well. Taste it once and then add salt. Cook it for 3 to 4 minutes over medium heat.

4. Switch off the flame. Your Karela Sabji is ready. Serve it hot with Phulka Roti.

Ingredients

  • Chopped Karela(Bitter Gourinto rings - 2 cups
  • Salt to taste
  • Red chili powder - 1 tsp
  • Cumin and coriander powder - 1 tsp
  • Jaggery - 2 tbsp
  • Oil - 2 tbsp
  • Turmeric powder - ½ tsp
