It’s been cold a bit here in Arizona and I Have been craving nothing but soups, warm foods and Chili. And This Quinoa Chili is one of my favorite recipes. The quinoa added such a nice texture, soaking up all the flavors and goodness of this chili. It’s also loaded with kidney beans and tons of veggies.
I love that its packed with nutritious ingredients and Its something feel great about eating and feeding my family. Its hearty, healthy, delicious and totally satisfying.
I like about this recipe is it’s so so easy to make. Just try this recipe once, without any doubt, you will make this Quinoa Chili again and again. Add your choice of veggies while cooking.

Boiled Kidney beans – 2 cups
Olive oil – 2 tbsp
Chopped garlic – 1 tbsp
Chopped onion – 1/2 cup
Chopped green chili – 1 tbsp
Chopped zucchini and yellow squash – 1 cup
Corn – 1/2 cup
Green and red bell peppers chopped – 1 1/ 2 cups
Chopped carrot – 1/2 cup
Chopped celery – 1/4 cup
Chopped tomatoes – 1 cup
Chopped spinach – 1 1/2 cup
Canned crushed tomatoes – 8 oz
Rinsed quinoa – 1/2 cup
Italian seasoning – 1 tsp
Salt to taste
Cumin powder – 1 tsp
Water as needed
1. Heat olive oil in a pan. Add green chilies, garlic and onion. Saute it for 2 minutes.
2. Add all the vegetables, crushed tomatoes, kidney beans and quinoa. Season it with Italian seasoning, salt and cumin powder. Mix them very well.
3. Add 2 glass of water. Cover it and let it cook for 45 minutes over medium to low heat. Stir occasionally. Add more water if needed.
4. Quinoa Chili is ready. Garnish it with lettuce, sour cream, cheese and avocado.
