Masala Nuts Ingredients
- Mixed Nuts: it’s important to use raw, unsalted nuts such as almonds, pecans, cashews, walnuts, and pistachios. You can also add other nuts and seeds based on your preferences, but make sure the total quantity remains at 4 cups.
- Honey: Just a few tablespoons of honey will lend the nuts a delightful, light sweetness.
- Oil: When it comes to oil, using a small amount of cold-pressed peanut oil will enhance the flavor and help coat the nuts. You can use any oil of your choice.
- Spices: My preferred spice blend includes cumin powder, coriander powder, salt, chili powder, chaat masala, turmeric powder, and garam masala. Feel free to personalize the spice blend by omitting any spices you don’t fancy or adding a pinch of something extra to make it your own!
See recipe card for quantities.
Instructions
- To make the Roasted masala nuts, preheat the oven to 300 degrees Fahrenheit. This low temperature will ensure that the nuts are evenly and slowly roasted without burning.
- Next, line a large-rimmed baking sheet with parchment paper or a silicone baking mat. This step is important as it prevents the nuts from sticking to the pan and makes for easy cleanup.
- Step 1: Combine the flavorful spices in a big mixing bowl, including salt, chili powder, cumin powder, coriander powder, chaat masala, turmeric powder, and garam masala. To balance the spices, add honey and oil to the mixture. Whisk everything together until well blended.
- Step 2: Now, it’s time to add the nuts. Add pistachios, cashews, walnuts, pecans, and almonds. Stir them well in the spice mixture, ensuring that every nut is thoroughly coated.
- Step 3: Spread the spiced nuts in a single layer across the prepared baking sheet. This will allow the nuts to roast evenly and achieve a beautiful golden color.
- Step 4: Bake the nuts in the preheated oven at 300 degrees F for 25 to 30 minutes. Stir the nuts after the first 15 minutes and then every 5 minutes thereafter. This stirring is crucial as it helps the nuts roast evenly and prevents them from clumping together, ensuring a perfect texture and flavor for your spiced nuts.
- Once the nuts are deeply golden and fragrant, remove the baking tray from the oven and give the nuts one final stir, spreading them into an even layer across the pan. Allow them to cool for about 10 minutes. This cooling process is not just a waiting period, it’s a crucial step that helps the nuts to crisp up and achieve the perfect texture.
- After they have cooled completely, transfer the Masala Roasted Mixed Nuts to an airtight container or sealed bag. When stored properly, these flavorful nuts will stay fresh for up to a month at room temperature. Enjoy the delicious, aromatic spiced nuts as a snack or a delightful addition to your favorite dishes.
Variations
In this recipe, I use mixed nuts. They are our family’s favorites. However, you can use whatever nut or seed combination you like in any proportion. Peanuts, pumpkin seeds, or macadamias would all be beautiful additions.
