- Sun-dried tomatoes – add a tangy depth to the dish, bringing a savory Tuscan flavor. Choose the ones packed in oil. It complements chili flakes by balancing the heat with a slightly sweet note.
- Vegetable Stock: The amount of stock you use will depend on the thickness you prefer for your sauce and the consistency of your cream. Add 1 cup of stock, then add more as needed to achieve your desired sauce thickness.
- Butter: We start this dish with unsalted butter to cook garlic, sun-dried tomatoes, and seasonings. For a vegan version, use non-dairy butter or olive oil.
- Garlic: Make sure to use fresh garlic.

Instructions
- Step 1: Heat butter in a pan. Add garlic and Sundried tomatoes. On a medium heat, Cook for about 1 minutes, until garlic is fragrant.
- Step 2: Then add chickpeas, salt, poultry seasoning, and red pepper flacks. Mix everything very well and cook for about 1 to 2 minutes.
- Step 3: Now add 1 cup vegetable broth (Or water), heavy cream, and Parmesan cheese. Mix well and continue cooking on medium, uncovered, for 5 minutes, stirring occasionally.
- Step 4: Remove from heat. Stir in chopped fresh basil. Serve warm with crusty bread or over rice.
Variations
- Add veggies: Steamed or broiled broccoli, green beans, asparagus, cauliflower, or zucchini are brilliant here. Stir them through the chickpeas at the end or serve them on the side.

Marry Me Chickpeas
Ingredients
Cooking chickpeas (If using canned chickpeas, skip this step)
- 1 ยผ cup dried chickpeas
- water.
To make Marry Me Chickpeas.
- 3 cups chickpeas drained
- 2 tablespoon butter
- 4 cloves of garlic grated
- ยผ cup sun-dried tomatoes in olive oil Olive oil drained, finely chopped
- 1 ยผ teaspoon salt or to taste
- 1 ยผ teaspoon poultry seasoning
- 1 teaspoon red chili flakes
- 1 cup heavy cream
- 1 cup vegetable stock
- ยฝ cup freshly grated parmesan cheese.
Instructions
Cook Chickpeas in Instant pot (Skip this step if using canned chickpeas.
1st method – Pre-Soaked Method
- Rinse Soak chickpeas / Garbanzo beans overnight or at least 8 hours in 5 cups of hot water.
- Drain the water.
- Take chickpeas in IP, add 5 cups water.
- Cover your IP with locking lid. Pressure Manual button for 15 minute under high pressure.
- When cooking time is done, turn off your IP and let pressure release naturally.
- Drain the water.
- Instant Pot Chickpeas are ready to use in any recipe. 🙂
2nd method – Direct / Without soaking Chickpeas cooking Method
- Rinse Soak chickpeas.
- Take chickpeas in IP, add salt and 5 cups water.
- Cover your IP with locking lid. Pressure Manual button for 40 minutes under high pressure.
- When cooking time is done, turn off your IP and let pressure release naturally.
- Drain the water
- Instant Pot Chickpeas are ready to use in any recipe. 🙂
