Farali Sukhi Bhaji / Dry Potato Sabzi is tasty sabzi made during fasting or vrat for festivals like Navaratri, Maha Shivaratri, Ekadhashi, Janmashtmi or Shravan mass upwas. I love this sabzi. I make it very often even if I am not fasting :). Farali Sukhi Bhaji goes very well with Rajgira Puri.
How to make Farali Sukhi Bhaji?
1. Heat oil in a pan. Add cumin seeds, let it splutter. Add ginger – chili paste and curry leaves. Saute it for few seconds.
2. Add chopped potatoes and salt. Mix them well. Cover it and cook it for 10 minutes or until potatoes are tender over medium heat. Stir occasionally. (If you are taking boiled potatoes, just mix it for 1 or 2 minutes).
3. Add Peanut powder, sugar and lemon juice. Mix them well.
4. Farali Sukhi Bhaji / Dry Potato Sabzi is ready. Garnish it with coriander/cilantro and serve hot with Rajgira Puri or eat it with curd.

Ingredients
- Peeled and cut into cube potatoes - 4 medium size you can take boiled potatoes too
- Ginger Chili paste - 2 tbsp
- Oil - 2 tbsp
- Cumin seeds - 1 tsp
- Curry leaves - 1 tbsp
- Salt to taste
- Sugar - 1 tbsp
- Lemon Juice - 1 ½ tbsp
- Coarsely crushed peanut - ¼ cup
