Daliya means cracked wheat / Ghav Na Fada(in Gujarati). Daliya is very popular all over India. Vegetable Daliya Pulao is considered to be one of the simplest, healthier and scrumptious one pot vegan meal. This is low in fat, high in Iron and fiber, and its best dish for everyone.
Making Vegetable Daliya in Instant Pot is very easy where the Broken Wheat Aka cracked wheat/Daliya, vegetables, basic Indian spices are cooked in Onion-ginger-garlic based tempering. Vegetable Daliya can be prepared in a pressure cooker as well as in Pot too.
According to Healthsite.com, Daliya, Popularly known as broken wheat / Bulgur Wheat, is a healthy alternative to whole wheat as it contains the outer bran, which makes it an excellent source of dietary fiber. The high fiber content in dalia gives you a feeling of fullness. It provides you with the energy required for the rest of the day.
Dalia is low in fats that not only aids in weight management but also prevents Obesity. So replacing wheat rotis or rice with Dalia is not a bad idea to boost your weight loss efforts. If you are a diabetic, Dalia is a better option to include in your diet. With high fiber content and fewer calories, eating a bowl of Dalia when you are hungry helps you to manage blood sugar. It Prevents constipation too.
It also contains various essential vitamins that can replenish the lost nutrients from the body if had after a workout. As Dalia is simple to make, easy-to-digest and low in fat, even pregnant women and older people can eat it. However, make sure you don’t eat more than two bowls of cooked Dalia (which accounts for 50 gm of uncooked) in a day.

Daliya Pulao / Daliya Khichdi
Ingredients
- 1 cup Bulgur Wheat / Daliya / Ghav Na Fada
- 1 cup Cauliflower florets
- 1 cup Chopped Bell pepper / Capsicum (I used red and green)
- Β½ cup Chopped carrots
- Β½ cup Green Peas
- Β½ cup Onion, Chopped
- 1 teaspoon Garlic grated
- 1 teaspoon Ginger grated
- 1 teaspoon Cumin seeds
- 2 tablespoon Light or extra virgin Olive oil or coconut oil (You can use any)
- 1 tsbp Mint
- 1 tablespoon Cilantro
- Salt to taste
- 2 teaspoon Red Chili powder (use according to your spice level, Spice level for this recipe is β )
- 1 teaspoon Garam masala
- ΒΌ teaspoon Turmeric powder
- 2 teaspoon Lemon juice
- 2 cup Water
Instructions
Vegetable Daliya Recipe in Instant Pot
- Wash Bulgur wheat / Daliya 2-3 times and drain the water.
- Turn on Saute Button, heat oil, add cumin seeds, ginger and garlic. Saute for few seconds.
- Now add all the chopped vegetables, washed daliya/Bulgur wheat, salt, chili powder, turmeric powder and water. Stir well.
- Turn off the saute mode, close the lid, Press the manual button. Set the time for 6 minutes under high pressure with pressure valve set to sealing.
- When cooking time is complete, do a quick release of the pressure.
- When the pressure is fully released, the float valve will drop and the lid will unlock to open. Now it is safe to open the lid.
- Open and give a gentle stir with fork.
- Now add chopped cilantro, mint and lemon juice. Give it a gentle mix.
- Daliya is ready. Serve it with Cucumber Raita, Boondi Raita or Plain curd/yogurt.
Vegetable Daliya Recipe Pressure Cooker
- Wash Bulgur wheat / Daliya 2-3 times and drain the water.
- Heat oil in a pressure cooker, add cumin seeds, ginger and garlic. Saute for few seconds.
- Now add all the chopped vegetables, washed daliya/Bulgur wheat, salt, chili powder, turmeric powder and water. Stir well.
- Close the lid. Take 3 to 4 whistles. Switch off the flame.
- When the pressure is fully released, the float valve will drop. Now it is safe to open the lid.
- Open and give a gentle stir with fork.
- Now add chopped cilantro, mint and lemon juice. Give it a gentle mix.
- Daliya In Pressure Cooker is ready. Serve it with Cucumber Raita, Boondi Raita or Plain curd/yogurt.
Vegetable Daliya Recipe in a Pan.
- Wash Bulgur wheat / Daliya 2-3 times and drain the water.
- Heat oil in a pan, add cumin seeds, ginger and garlic. Saute for few seconds.
- Now add all the chopped vegetables, washed daliya/Bulgur wheat, salt, chili powder, turmeric powder and water. Stir well.
- Cover it with lid. Let it cook for 12 to 15 minutes over medium to low heat until Wheat is cooked, Stir occasionally. Add more water if required.
- Open and give a gentle stir with fork.
- Now add chopped cilantro, mint and lemon juice. Give it a gentle mix.
- Vegetable Daliya In Pan is ready. Serve it with Cucumber Raita, Boondi Raita or Plain curd/yogurt.

Bulgur is very good mixed with ground meat. Wash good, put in a bowl, add cold water to cover bulgur, cover container with a tea towel for approx. 15 minutes to swell and soften. Blend bulgur with meat and other desired spices and olive oil. Makes your favorite meat dish.
