Veg Kolhapuri

Spicy Mix vegetable curry that is made to mimic the flavors from Kolhapur, this Veg Kolhapuri sabji is the best, most flavorful, and restaurant-style recipe!

Make this for any party or gathering; your guests will have a hard time believing this wasn’t ordered from a restaurant!

Ingredients

- 1 tablespoon Oil – 1 inch cinnamon – 3 cloves – 5 peppercorn / black pepper – 3 green cardamom – 1 teaspoon cumin seeds

make Kolhapuri paste

– Set a pan on low heat, Dry roast all the spices. Take it into blender jar make a paste.

Saute garlic, ginger, green chili, onion, tomato for few minutes. Add cashew red dried chilies, water and cook for few minutes. Take it into blender and make paste.

Make tomato onion paste

Fry all the vegetables one by one until tender. Tip - you can steam or roast them too.

Fry vegetables

combine everything and add kasuri methi. cook for 3 to 4 minutes.
