Sambar / Sambhar is a staple part of the most South Indian meals. Every family has their own personal recipe to making this dal. It is served with Idli, Dosa, Pongal or even with rice. Sambar with rice is one of the main course in everyday South Indian meals. Sambar can be made with any vegetables. I love my Sambar with lots of vegetables. Choose vegetables according to your liking.
Boiled and Crushed Toor dal – 2 cup
Chopped (into small pieces) Mix vegetables – 2 cups (I used Carrots, bell pepper/capsicum, Dudhi/bottle gourd, Potatoes, Tomato and onion)
Oil – 2 tbsp
Mustard seeds – 1 1/2 tsp
Urad dal and fenugreek seeds powder – 1 tsp
Curry leaves – 7 to 8
Salt to taste
Sambar powder – 2 tbsp
Chili powder – 1 tbsp
Turmeric powder – 1/4 tsp
Tamarind juice – 3 tbsp
Cilantro / coriander – 2 tbsp
Water – 3 cups or as needed
1. Heat oil in a pan. Add mustard seeds, let it splutter and add Urad dal and fenugreek seeds powder. Add curry leaves. Saute it for few seconds.
2. Add Chopped mixed vegetables. Saute them for 3 to 4 minutes. Add Salt, Sambar powder, chili powder and turmeric. Mix them very well.
3. Add boiled and crushed dal with water. Mix well.
4. Add tamarind juice and let the dal boil for 10 – 15 minutes over medium heat. Adjust the consistency according to your preference. If you like thin Sambar, add more water. Add chopped cilantro.
