Sambar / Sambhar is a staple part of the most South Indian meals. Every family has their own personal recipe to make this dal.

It is served with Idli, Dosa, Pongal or even with rice. Sambar with rice is one of the main course in everyday South Indian meals.

It can be made with any vegetables.

I love my Sambhar with lots of vegetables. Choose vegetables according to your liking.

How to make Sambar / Sambhar?

1. Heat oil in a pan. Add mustard seeds, let it splutter and add Urad dal and fenugreek seeds powder. Add curry leaves. Saute it for a few seconds.

2. Add Chopped mixed vegetables. Saute them for 3 to 4 minutes. Add Salt, Sambar powder, chili powder and turmeric. Mix them very well.

3. Add boiled and crushed dal with water. Mix well.

4. Add tamarind juice and let the dal boil for 10 – 15 minutes over medium heat. Adjust the consistency according to your preference. If you like thin Sambar, add more water. Add chopped cilantro.

5. Sambar / Sambhar is ready. Serve it hot with Idli, Dosa, Uttapam or With Rice.

Ingredients

  • Boiled and Crushed Toor dal - 2 cup
  • Chopped into small pieceMix vegetables - 2 cups (I used Carrots, bell pepper/capsicum, Dudhi/bottle gourd, Potatoes, Tomato, and onion
  • Oil - 2 tbsp
  • Mustard seeds - 1 ½ tsp
  • Urad dal and fenugreek seeds powder - 1 tsp
  • Curry leaves - 7 to 8
  • Salt to taste
  • Sambar powder - 2 tbsp
  • Chili powder - 1 tbsp
  • Turmeric powder - ¼ tsp
  • Tamarind juice - 3 tbsp
  • Cilantro / coriander - 2 tbsp
  • Water - 3 cups or as needed

Instructions

  • Add Chopped mixed vegetables. Saute them for 3 to 4 minutes. Add Salt, Sambar powder, chili powder and turmeric. Mix them very well.
  • Add boiled and crushed dal with water. Mix well.
  • Add tamarind juice and let the dal boil for 10 - 15 minutes over medium heat. Adjust the consistency according to your preference. If you like thin Sambar, add more water. Add chopped cilantro.

    Hi,
    I am wondering which sambhar powder do you use. It looks yummy but lot of flavor depends on sambhar masala. Unless you use your own and if so please share sambhar masala recipe.
