Pasta Aglio E Olio / Spaghetti Aglio E Olio is a traditional Italian Pasta dish coming from Naples. Aglio means garlic and Olio means Oil.

The dish is made by lightly sautéing sliced garlic in lots of extra virgin Olive Oil with the addition of chili flakes and tossing with spaghetti. It sounds too simple to be good, but it’s among the best. Amazing dinner for the family.

We are pasta lovers. We love Lasagna rolls, Manicotti, cheese Cannelloni, veggie pasta bake, five cheese Ziti and many more. Pasta Aglio E Olio is one of the most basic and easiest Italian recipes. This is one of those recipes that you should always have in your back pocket b’coz its the quickest way to get a hot, tasty meal on the table.

This can be served with Salad and French bread. I love this pasta dish as is.

How to make Pasta Aglio E Olio

1. Fill a large pot of water and sprinkle in some salt, bring it to a boil. Add spaghetti. Cook them until tender or according to a package instructions.

2. In a pan, add olive oil, garlic and red chili flakes. Turn on the heat on very low and cook for about 5 minutes or until the garlic is lightly golden brown in color. Remove from the heat and keep it aside.

3. Drain your spaghetti and place it into a pan. Pour in the oil mixture, salt, and the chopped parsley. Toss everything together so that the oil coats every piece of the pasta.

4. Spaghetti Aglio E Olio / Pasta in garlic olive sauce is ready. Sprinkle some Parmesan cheese and serve hot.

Ingredients

  • ½ cup Extra virgin olive oil
  • 6 cloves Big Garlic cloves (Thinly sliced into round shape)
  • ½ teaspoon Red chili flakes
  • 2 tablespoon Fresh chopped parsley
  • Salt to taste
  • 450 grams Spaghetti
  • Parmesan cheese for garnishing Optional

Notes

Make sure you saute garlic at very very low temperature, otherwise it may burn and will taste bitter.
