Today, I am sharing a super easy, crispy from outside and mouth melting from inside recipe of Eggless Coconut Cookies. These cookies are more of a Indian style cookies. Eggless Coconut Cookies are perfect for kids lunch box, after school snack or evening hunger. πŸ™‚

Eggless Coconut Cookies

Coconut Cookies are so good with cup of Masala Chai. This recipe is my Mother-in-laws recipe. She makes world best coconut cookies. πŸ™‚ These are Indian style biscuits, crispy, not too sweet and perfect to be dunk in the tea. And the best part is, you don’t require baking powder or baking soda. Just very basic ingredients and some delicious cookies ready in no time! Seriously takes only few minutes.

For this cookie, you require good quality butter. I used Kerrygold Irish salted butter. You can use unsalted butter too, just add pinch of salt with all purpose flour while making dough. Little bit salt enhance the flavors. And rest of the ingredients are Coconut powder (Unsweetened), sugar, Vanilla extract, milk and all purpose flour.

All Purpose flour / Maida – 200 grams around 1 and 1/3 cup

Sugar – 75 grams (1/3 cup)

Vanilla extract – 1/2 tsp

Salted butter – 100 grams (room temperature) Around 1/2 cup

Coconut powder – 55 gram (around 1/4 cup) + 2 tbsp

Milk – 2 tbsp

1. Take butter in big mixing bowl. Make sure you cream is at room temperature. Cream it for 1 minute.

2. Now add sugar and cream it until well combined.

3. Add Milk and vanilla extract. Mix until well combined.

4. Slowly add all purpose flour and coconut powder. Make a dough. At this stage, dough is very soft and we won’t be able to roll it. Cover the dough and keep it in refrigerator for 30 minutes.

5. Now preheat your oven at 350 degree F.

6. Dust your work surface with little bit flour.

7. Now start rolling the dough in rectangle shape. Take palette knife and just get the edges straight. Just like shown in the video.

8. Trim the edges from all the sides.

9. Run the palette knife underneath the dough so that it is easier to lift the cookies.

10. Now sprinkle some coconut powder and gently press it with the help of rolling pin.

11. Now cut the cookies in square shape or your choice of shape.

12. Do the same process with the leftover dough.

13. Grease cookie pan with butter and arrange all the cookies.

14. Bake them @ 350 degree F. for 15 minutes.

15. Let them cool down completely. Store this in air tight container. You can store this for upto 2 weeks.

16. Eggless Coconut Cookies are ready. Enjoy them with tea or coffee.
