Cottage Cheese Bhurji - Ready under 20 minutes!

Ingredients
- 2 cups cottage cheese
- 1 ¼ cup chopped tomatoes
- ½ cup chopped onions
- 1 ¼ cup chopped bell pepper
- 1 teaspoon grated ginger
- 1 teaspoon grated garlic
- 2 finely chopped thai chilies
- 1 teaspoon cumin seeds
- 1 teaspoon kashmiri red chili powder
- ¼ teaspoon turmeric powder
- 1 ½ tablespoon pav bhaji masala
- 1 teaspoon salt or to taste
- 1 tablespoon oil
- ½ cup water or as required
- 2 tablespoon finely chopped cilantro
- 1 tablespoon lime juice
Method
- Start by heating 1 tbsp oil in a pan and letting 1 tsp cumin seeds crackle for a few seconds.
- Add the 1 tsp grated garlic 1 tsp grated ginger, 2 finely chopped thai chilies, ½ cup chopped onions, 1 ¼ cup chopped tomatoes, 1 ¼ cup chopped bell pepper and 1 tsp salt or to taste. Stir well and cover it with a lid.
- Let it soften but still have some bite left. It will take about 2 to 3 minutes on medium flame.
- Then open the lid and add ½ cup water or as required. Mix well.
- Now add in the, ¼ tsp turmeric powder, 1 tsp kashmiri red chili powder, and 1 ½ tbsp pav bhaji masala. Stir everything together until the raw spice smell fades and it turns into a deep, fragrant base.
- Now for the best part, add in the 2 cups cottage cheese and gently fold it into the masala. Let it cook for 2 to 3 minutes on medium flame. Switch off the flame.
- Finish with 1 tbsp lime juice, sprinkle on 2 tbsp finely chopped cilantro and you're done. That's genuinely it, a quick, protein-rich, comforting vegetarian sabzi made in a single pan.
- Serve this hot Cottage Cheese bhurji with Phulka roti or plain paratha and pickled onion.

Cottage cheese is technically already "cooked," so you're not trying to cook it so much as gently warm and flavor it. Leave it on the heat too long, and it turns rubbery and sad; add it last, keep the flame low, and pull it off the heat as soon as everything looks combined.
Every brand of pav bhaji masala tastes a little different — some lean spicier, others tangier. Add a little, taste, then build from there. You can always add more masala, but you can't take it back out.
