Queso is creamy, delicious and easy dip. This dip is an appetizer or side dish of melted cheese and chili pepper typically served in Tex-Mex restaurants as a sauce for nachos. Queso is a warm dish. It can be eaten with tortilla chips or can be used as a condiment on Fajita, Tacos, Enchiladas, Quesadillas, Flautas or any other Tex-Mex dish. I have used Velveeta cheese for this dip. I will post Queso dip recipe using other cheese and milk very soon.
Velveeta Cheese – 16 oz or 453 gm
Canned diced tomatoes and green chilies – 1 small can (I have used RO-TEL brand)
Chopped cilantro / coriander – 1 cup
1. Take microwave safe big bowl. Cut Velveeta cheese into small cubes. Place these cubes into the bowl.
2. Microwave cheese for 2 minutes. Take it out, stir it and add diced tomatoes and green chili.
3. Again microwave it for 3 minutes on high temperature. Stir well.
4. Add cilantro / coriander into the melted cheese. Mix them very well.
Note :- If you don’t want use Canned diced tomatoes and green chilies, you can use fresh finely chopped 2 tomatoes, 1 finely chopped green chili and salt to taste. If dip thickens, add 1/2 cup whole milk, stir well and again microwave it for 1 minute on high temperature.
