Beetroot Thoran

Beetroot Thoran is a delicious and traditional side dish from Kerala, India. It is a perfect combination of earthy, sweet, and mildly spicy flavors that will tantalize your taste buds.

This vegan and gluten-free beet stir fry is healthy and very easy to make – it can be whipped up in less than 30 minutes. This dish is an excellent accompaniment to rice and can quickly become a family favorite.

Ingredients

Heat oil. Add urad dal, cumin, mustard seeds. Let it crackle. Add chili, curry leaves, garlic and onion. Saute for few minutes.

Add finely chopped beetroot, salt and turmeric powder. Sit, cover and cook.

Once cooked add fresh coconut and lemon jioce. Stir. Serve hot with rice, roti or paratha.
