Kaju Pista Strawberries

Kaju Pista Strawberries are Indian sweets that are very similar to Kaju Pista Rolls. Kaju and Pista means cashew nuts and pistachio respectively. These strawberry shaped sweet is absolutely delicious. When I was in India, I tested Kaju strawberries in Mumbai. So I thought let’s try to make Kaju Pista Strawberries on this Diwali. This was my first attempt to make the Kaju Pista Strawberries. Though Shaping is not that perfect, it is very delicious. I can never eat just one, and if you make this recipe, you won’t be able to either. This is perfect for gifting.

Ingredients

For kaju (Cashew) Mixture

Powdered Cashew -1 cup

Sugar – 1/2 cup

Rose essence – 2 to 3 drops

Red food color – few drops

Water – 1/2 cup

 

For Pista (Pistachios) Mixture

Powdered Pista – 1/2 cup

Sugar – 1/4 cup

Green food color – few drops

Water – 1/4 cup

Direction

For cashew mixture

1. In a heavy bottom pan, take sugar and water. Over a medium flame, bring to one string consistency. If you check a drop of syrup in between your index finger and thumb, a string will form. Add Rose essence and red food color to this syrup. Add powdered cashew and keep mixing over medium flame. Check the consistency by greasing your hand. You will be able to roll a ball.

2. Switch of the flame. Transfer the dough in a another bowl. When a dough is warm enough to handle, grease your hands and divide the dough into 10 equal balls.

3. Shape them just like strawberries. See the pictures for better Idea. Use toothpick or fork to make a small holes just like strawberries.

For Pista Mixture.

4. In a heavy bottom pan, take sugar and water. Over a medium flame, bring to one string consistency. If you check a drop of syrup in between your index finger and thumb, a string will form. Add green food color to this syrup. Add powdered pista and keep mixing over medium flame. Check the consistency by greasing your hand. You will be able to roll a ball.

5. Switch of the flame. Transfer the dough in a another bowl. When a dough is warm enough to handle, grease your hands and divide the dough into 10 equal balls.

6. Flatten each into rounds and cut into quarters. Stick each quarter to the strawberry.

7. Kaju Pista Strawberries are ready.

Notes :-

  • As soon as you make the dough, you should shape it, without letting the dough dry. If you feel dough is little bit dry, add 1 to 2 tbsp milk and knead the dough.
  • Sugar syrup consistency is very important to make perfect strawberries.
